Rocky Road Fudge

If you're anything like me, you have an unquenchable sweet tooth. Nicole Immens of Terril, IA sent in a great way to add a special twist to your daily chocolate fix. And if you love Rocky Road Ice Cream, it'll be right up your alley!

Rocky Road Fudge
 
16 oz Hershey's Milk Chocolate
1 tablespoon Butter or Margarine
1 can Sweetened Condensed Milk
1 10-1/2 oz bag Mini Marshmallows 
1/2 cup Chopped Walnuts
 
Combine mini marshmallows & walnuts in a large bowl and set aside. In a double boiler over low to medium heat, melt together the chocolate, butter/margarine and sweetened condensed milk, stirring constantly to prevent burning. Once the ingredients are completely melted, pour over marshmallow/walnut mixture and mix until everything is coated. Spread out evenly in a 9" x 13" baking dish (you can line with wax paper if you wish.... makes for a MUCH easier time when trying to remove from the pan) and refrigerate for 3 hours.  Cut into bite-size pieces and enjoy!

Karissa's Tips: A double boiler is easy; just place a glass bowl on top of a pot of boiling water on the stove, making sure the water level does not touch the bottom of the bowl. The steam will provide a gentle heat to the bottom of the bowl, preventing the chocolate from burning. Because I'm allergic to nuts, I sprinkled the walnuts on top of half the mixture. Get creative! If you prefer peanuts, try those instead! Or maybe a little caramel drizzle on top? The comparison to ice cream is a great starting point. Whatever you would put on a sundae, try putting in the fudge. I definitely recommend using the wax paper, or at least spraying the pan with cooking spray. It does help tremendously in the end.
