Creamy Italian Chicken

Who doesn't love a good hearty meal in the crock pot? This recipe sent in by viewer Jasmin Harstad is a new take on chicken and rice that you and your family will love this Fall!

Creamy Italian Chicken
 
4 boneless skinless chicken breast halves
1 envelope Italian salad dressing mix
1/4 cup water
1 package (8 ounces) Cream Cheese, softened
1 can (10-3/4 ounces) condensed cream of chicken soup (or cream of mushroom), undiluted
1 can (4 ounces) mushroom stems and pieces, drained
Hot cooked pasta or rice
Fresh oregano leaves, optional
 
Place the chicken in a 3-qt. slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on low for 3 hours. In a small bowl, beat cream cheese and soup until blended. Stir in mushrooms. Pour over chicken. Cook 1 hour longer. Serve with pasta or rice. Garnish with oregano if desired. Yield: 4 servings

Karissa's Tips: Chicken and rice is one of my favorites, so I was very excited to try this recipe. I think it would also be great with a ranch dressing packet or with other vegetables in addition to the mushrooms. Only have Cream of Mushroom in the cupboard? Jasmin says she substitutes that all the time. Make sure the cream cheese is well softened to ensure a creamy sauce.
