Pumpkin Cream Cupcakes

Who says Halloween has to be all about the candy? Here is a sweet pumpkin treat that has a little trick on the inside. Thanks to Josie McRoberts of Hubbard, NE for sending it in!

Pumpkin Cream Cupcakes

1 pkg.  Spice Cake mix
1 pkg.  Vanilla  Instant Pudding
1 cup Canned Pumpkin
1 pkg.  (8 oz.) Cream Cheese, softened
¼ cup Sugar
1 Egg
¼ tsp. Cinnamon
¼ tsp. Nutmeg

Preheat oven to 350ºF. Prepare cake batter as directed on package. Add dry pudding mix and pumpkin; mix well. Spoon into 24 paper-lined muffin cups. Beat cream cheese with mixer until creamy. Blend in sugar, egg, cinnamon, and nutmeg; spoon over batter. Bake 18 to 21 min. or until toothpick inserted in center comes out clean. Remove to wire racks. Cool completely.

Karissa's Tips: Everyone loves cupcakes! These are super moist and may be better (and cheaper!) than the ones you buy at the bakery. I used a Ziploc bag with the corner cut out to put the cream cheese in the batter. I also frosted them lightly with some cream cheese frosting for an extra special touch. Enjoy!
