Cornbread is one of my favorites for the holidays and year round. This simple "upgrade" from Joan Tunink of Odebolt, IA adds in extra flavor and moisture to ensure delicious results every time!
Spoon Bread
1 medium Onion (chopped)
½ medium Green Pepper (chopped)
½ cup Oleo (margarine)
1 pkg. of Frozen Corn or 1 can Whole Corn
1 can Creamed Corn
3 eggs (beaten)
1 pkg. Jiffy Corn Muffin Mix
1 cup Sour Cream
½ cup Shredded Cheddar Cheese
Sauté onion and green pepper in margarine. Meanwhile, mix together corn, creamed corn, eggs, muffin mix, and sour cream in a bowl. Add sautéed vegetables to batter. Pour into a well greased 8"x8" casserole dish. Cover with cheese and bake at 350° for 45 minutes.
Karissa's Tips: Try browning some bacon in a skillet and then sautéing the vegetables in the bacon grease. Adding that to the bread would add the smoky, salty bacon flavor that everyone loves. If your favorite part is the cheese, try mixing some in with the batter too!
